Yucatan Mussel Salad (Mexico)

Serves 4

INGREDIENTS

2 lbs. Canadian Cove mussels, steamed & shucked
1/3 c. diced red onion
1/2 c. diced sweet red pepper
1/4 c. chopped cilantro
1/2 c. diced green pepper
3/4 c. olive oil
1 minced jalapeno pepper
1/4 c. fresh lime juice
1/3 c. chopped celery
Salt & pepper to taste

DIRECTIONS
Thoroughly mix mussels with rest of ingredients and let marinate overnight. Makes two pounds of salad.

Mussels feed entirely on plankton. To do this they can filter up to 65 litres of water a day.
