Mussels a la Jane
Medium_mussel_soup

INGREDIENTS

1/4 c. chopped onion
2 lbs. Canadian Cove mussels
1 clove garlic, minced
3 T. cream (optional)
4 T. chopped red pepper
Fresh chopped chives
1-2 T. olive oil
1/2 c. tomato pasta sauce
1/2 c. white wine
1 T. chopped fresh rosemary
Black pepper

DIRECTIONS
Briefly sauté onion, garlic and red pepper in olive oil. Add pasta sauce, white wine, rosemary and black pepper and simmer for 10 minutes. Add mussels and cook until they open (3-4 minutes). Just before serving, add cream and garnish with chopped chives.

It takes 2 years for the Mussels to grow to harvesting size and wild, salt-water mussels can live up to 50 years.
