Easy Mussel Salad Avocado
INGREDIENTS
2 lbs. Canadian Cove mussels, cooked and shucked
2 cups cooked shrimp (optional)
4 T. chopped fresh parsley
1/2 cup diced red pepper
1/2 small red onion (optional)
1/2 cup Italian salad dressing
1/2 cup chopped celery
3 avocados, cut in half with pit removed
Serve on top of salad greens or with a sprig of parsley
DIRECTIONS
Mix all ingredients (except salad greens) and let marinate overnight. To serve scoop out half the avocado, then mound mussel salad in the avocado halves. Place on dressed salad greens.
