Steamed Mussels

This easily prepared dish looks great and is a fantastic appetizer for any occasion.
Serves 2
Cooking time: 10 minutes

INGREDIENTS

1kg/2lbs Canadian Cove Mussels
125ml / 1/2 cup water, dry white wine or beer (optional)
25ml / 2 tbsp celery, diced
25ml / 2 tbsp onion, diced
6 lemon wedges
to taste cracked black pepper
50ml / 1/4 cup melted margarine or butter with a pinch of cayenne pepper

DIRECTIONS
Place water, wine or beer, celery, onion and mussels in a 5 qt (4 3/4 L) pan. Cover and steam over high heat until mussels open (5-8 minutes). Squeeze lemon juice over mussels, sprinkle with pepper and serve with melted butter or margarine for dipping.
